I have to say some of my favorite free gifts are the soaps from the hotels, and I love the autographed picture of Mickey and Minnie left in our room for us on our Anniversary. That was such a surprise and so sweet.
I also love the lanyard and free pin my wife and I received for the Expedition Everest sneak peak ride.

For the birthday buttons just go to the guest services for each park. I think the OP meant button, not pin for your birthday.
Now, since I just got back, I have to say that besides all the wonderful memories, and over 1000 photos I took, my favorite free souviners are the park maps and the little soaps with the mickey face on them.

I like to get park guidemaps each time i go, so that every once in a while i can look at them and see how much the park has changed since my first visit.

I like to keep park guidemaps bacause every once in a while i can go back to all of them and see how much the parks have change since my first visit in the early 90s.

I think my favorite free souvenir from my last trip was the mickey head and castle confetti that was on our table for my birthday dinner. I saved it. I also enjoyed all the stickers that they pass out. Nothing like feeling 5 years old again when you are handed a sticker!

Park maps and yes all the little stuff from the rooms. I use those Mickey face liners as coasters. Whenever I travel for work my DW fills the little Mickey bottles with shampoo and conditioner.

Maps. I agree that they are a great way to figure out everything that has changed. They are also infinitely useful in creating scrapbooks. You can get the exact name and location of things as well as using the maps themselves as paper.
I also love the merchandise bags. They usually have interesting graphics.
Finally, I swipe coasters or napkins from the restaurants when they have then. I got a beautiful coaster from the Coral Reef a few years ago. I just love the graphics.

We also like the park guidemaps and weekly schedules as well as the resort literature you get when you check in (resort maps, folders, etc.).
We like the resort soap and shampoo though. Last trip I left a note for Mousekeeping, with a generous tip, asking if they could leave some extra soaps and shampoos behind. They left a bag full (it was hard to fit in our suitcase) - enough to keep dd and ds in Disney shampoo and soap until our next trip (summer 2010).

I collect Fastpasses. I don't usually use them unless it's a busy busy day when I go to the parks on my days off, so I go around and get a few and save them. I have them all displayed on my wall. Nce thing to collect.

I like to save the guidemaps as well. I'm so sad that I threw out a bunch of them from late '80's WDW when I was cleaning several years ago. I would love to have them now.

Definately maps, resort stuff, and fastpasses. I only need a few that are not given out any more to have a complete set.
Something new I see on my bookshelf are the cups of the season. I have 2008 and 2009 Halloween & Christmas cups that are used for drinks at all the counter service.

For me, just about anything that isn't bolted to the ground and that isn't considered stealing. So soaps, bottles, napkins, coasters, etc. If it says WDW or has a picture of Mickey Mouse on it, it's coming home with me!
