Well shipping prices depend. Try shipping a Styrofoam container sometime. If your items density is lower than some value (ie you are shipping more air than anything else.) They have an up-charge. Racing bikes suffer from this all the time. A modern racing bike is ~15#s (5kgs, as I recall is the minimum weight for a pro bike) but the volume of the box is pretty big, but it's all padding/air.
Also if you buy the insurance when you ship that changes based on value.
The way "They"/Disney gets away with it is that they have stuff exclusive to the parks. And not everyone that wants it, can just go down to the park and pick it up. And this why LaughingPlace gets away with the prices they charge.

I was wondering about that. I haven't used the mail order service before, but do they put 'mandatory' insurance on items as the price goes up? They insure things somehow. If it's though the shippers insurance or they carry their own, or (as some places I've worked have done) self insure; I'm not sure.
Infact I wouldn't doubt it's a combination. $10 T-shirt, if it doesn't get to the person, just put another one in the mail, a $3,000 cut crystal mickey I'm sure they want to know where it went.

I don't know what "other" sites you are talking about. I know most larger places it's fixed. Sears.com, Lowes.com, disneyshopping.com, (even) bikenashbar.com they all have fixed shipping schedules. There are a few items where the shipping is different, like bike wheels (very light for there size) or furniture (heavy for it's size.) it's usually how it's done on other sites
I would say insurance being an option is more a sign that it's a small company. They don't do enough volume to incorporate the insurance into the shipping charge.

Okay I can't dispute that for two reasons, no examples (I provided 3 examples), and I don't order much from French websites (and by not much I mean I can't think of a single thing.) Also I don't know anything about the laws in .fr could be as simple as they can't legally include it in the price.
