If this batch of meade turns out Tiki, you could try another batch with the same ingredients but vary the yeast and see if it makes a difference!

Wiz, I think the yeast DOES change the flavor of the product. Different yeasts will change the flavor of anything being fermented. When I make pretzels and bagels, they really taste like bread. I think that professional bakeries must use a different yeast for those two delectable treats than what is used for regular bread.

They really don't, it's rare to see anyone using fresh yeast because it has almost no shelf-life, most just use instant yeast since it's shelf stable and produces the same flavor.
The only slight difference is sourdough, which can also use the same yeast as other breads, and it gets it's flavor from the heavier amount of digested carbs and higher concentration of yeast.
They should all produce the same actual flavor, but it's their speed and output of gas and ethanol is what can vary between strains. Otherwise it would be used to hype beverages more.

Well there are various strains of yeast out there. Depending on how long you let the liquid ferment will result in varying aspects of your final product.
EDIT: also just checked my batch after coming home from work and it looks like the yeast is starting to take effect and feed off of the nutrients I have supplied it (which is good!), however it's obviously being very slow and wanna see those bubbles coming out of that plastic tubing I've stuck in the jug. That'll tell me 100% that YES the yeast is taking action and fermentation is under way! I'll check back on it in the morning. In about 2 or 3 days, if all is going well and the foam is slowing down I'll put a little more water in.

I came in to say I enjoy Carlsberg in Norway, however I think I have stumbled into a brewmasters debate and now I have the itch to start making my own.

I'm anything but a brewmaster! I just started yesterday! As a total newbie I would however encourage anyone to give it a go! Making mead is suprisingly easy and you can watch your brewbaby ferment and become delicious! Science!

I have a friend who has brewed up a few batches and they have all been great, I'm thinking I will tag along next time he makes a new batch and maybe start my own. It sounds like a pretty fun process.

Well after this convo and yesterday's adventures, I went ahead and made a new batch, this time going by a recipe WORD FOR WORD. It's the "Ancient Orange Mead" recipe that you can find all over the internet. You don't even have to rack it! Let it ferment, check on it in a few days, add a little more water and just let it sit for a couple months! It's a smaller batch than yesterdays and will probably yield close to 3 pints, but it already looks way better than yesterday's concoction. this one has orange slices and raisins instead of apples and ginger. Woo!

Im fond of Sierra Nevada Pale Ale. Its brewed right down the road from me in Chico Ca. I have found it at the Whispering Canyon and at the Wave bar at the Contemporary. At first I didn't really care for the taste but after a six pack or so I now like it a lot

Have any of you tried Hard Apple Cider ?
I have worked on a Micro Brewery in Colfax Ca
It sells two Brands Foxbarrel and Crispin
its not beer but its not bad either.

I've had the Crispin at my local watering hole. Like you said it's not beer but its good!
