Come on, it's not that bad - it can be a very instructive experience, especially for kids [if they don't classify it as "boring" immediately, but I'm afraid most kids do that on the spot - although the storm-part at the beginning is not as unspectacular as the rest of the ride]. And, of course, a good place to catch a nap.
And try to see it this way: If the Land would be closed, Epcot restaurants wouldn't get Disney-grown fruit and vegetables any more.

I'm sure it was easier to close down the FR area to build Soarin', but I would also guess that they didn't want to remove the Living with the Land attraction because it showcases what they are trying to do in growing food in new and advanced ways. Of course, that's the whole Future World-concept. Or, more accurately phrased: It was the Future World-concept, since it's nearly impossible for Disney to continuously present all the current break-through technologies - technology is progressing way to fast for this. Actually the queue for Soarin' was the waiting area for those shows. If you look to the left of the entrance to Soarin' you'll see a counter that looks like one you'd see at an airport, kinda. ITA. It was 11 years before we returned to Epcot after the visit that included these attractions... In a way it still is. I loved KK and Food Rocks. Cheesy, yes, but fun.
