What is high hydration dough??? Is this what I would call a sticky dough?

Yeah, high hydration is any wet dough. I find that they are always lighter, crisper, and easier to work than really stiff doughs.

I usually make a ton of brioche dough during thanksgiving (for lazy bastard cinnamon rolls for TG day and Xmas day as well as for rolls, panetone, etc.) so I will have pics of that later this month.

That reminds me, last year was my first year trying to knead in chocolate to the dough. I saw the technique and did it properly but when it came time to depan the giant brioche some of the molten chocolate got on my arm. Nothing serious but it stung like crazy.

I find it depend on oil/fat content of the dough. I made some high oil content (1/4 cup)doughs that are stiff, but come out light and soft. I make other doughs that either have little or no oil/fat content and are dense and hard shelled breads. Chewy also depends on other factors such as egg or egg white content, if any sugar is used, if a salt/malt boil is used, and type of flour used. It also varies with type of starter used.

Oh, I usually call a high lipid dough a "Rich" dough. If the dough is "wet" then it's a high hydration in my terms.

After doing some research, I've found that my Ciabatta bread is made from a high hydration dough. Who knew? Unlike you, I was taught to cook by a long line of family members (Mom, sisters, aunts, uncles, and my Godfather owned a small restaurant ) and to this day anybody I can learn from. I'm accomplished but not formally trained, so I don't know all of the terms. One of my DSs asked if I was an expert at baking bread? I told him it's one of those things that I will always be learning to do.

Baloo says I cook by instinct. I also home brew, haven't brewed anything in a while. I am getting together the things I need to brew a 3 shilling Ale right now and am going to brew a Sweet Still Mead sometime this winter. I won an award in the 1996 Peach State Brewoff with it!

I will consider that a concession speech. :D

I'd say "Go and try home distilation with your beer" but you're in a state with a large enough moonshiner population that the ATF be more likely to catch you. A friend of mine brought back some bottles from Mt. Vernon and Monticello that followed the guides from the famous residents there. I think Jefferson had the peach brandy and Washington had the whiskey, I haven't gotten to try them yet since he hasn't opened the bottles. Either the parks service is desperate or has become awesome.

What concession? I was trying to tell you....I'm much more talented then you'll ever be...by pure instinct!! I was trying to let you down easy!! That's what one gets for being nice! ;+>

I would never run any kind of still!! That is against the law!!! I have no idea what a bucket still is!!

It was one of those "Hurry up and wait" sort of days so I had a lot of home lag time. So here they are, in some parts of the country I've heard them called "(topping names) bread" and is sold as a giant loaf, these are individual portions. The sauce itself is served on the side as well.
