Yikes! Reminds me of a fish fry we went to on St. John. I was totally unprepared for my dinner to be looking back at me while I ate :shock: so I waited a minute until they had a "tail" available! Boy was it good though!! :D

I know what you mean, dichuy. We've been to Cancun three times, and may have even eaten at the place you describe(the last trip was a while back and I can't remember the names), and I remember seeing fish like that. I actually tried some, and it was delicious, but I just can't bring myself to eat the eyes..... yuck! :x

Very nice, what are you doing to that cat and is it legal in TN?

Anyway, for the mini party last night (just a few friends over to deal with the whole 8 trick or treaters)

I made wings 3 ways (traditional, korean, and jerk style) they are all spicy but the jamacian naplam of the jerk sauce had people sweating like a priest at a boy scout jamboree. :D

I'm not exactly sure what the drink is (wasn't tending bar) but it used fresh grapefruits and cassis.

The night reminded me of one of my friends of his ketamine/morphine candy (I forgot what it is), and I swear one day I will hear about him being arrested for giving it out at halloween and then kidnapping the kids and selling them to work the diamond fields or something. :mrgreen:

I forgot to ask, do you boil your bagles or do you go straight in the oven after proofing?

Yeah, with the Jerk sauce it looks and (at first) tastes nice, harmless, ect. but after about 30 seconds the burn from the scotch bonnets/habenros kicks in and you are burning. As per usual a few people wanted to down shots of my jerk sauce, sadly no video of this exists as it would be a party foul.

I let then raise and boil them in a salt bath. I like a soft almost pretzel like bagel. Every once in a while I'll get lazy and only boil half of them. I only do that because of time constraints.

I love the look on peoples face when they try my Insanity Sauce. Why do they always want water or beer to cool the burn? It's got to be dairy!!

Have you ever tried using a baking soda (or other alkeline) bath? It actually makes them more golden brown (not sure if it makes them have a better chew).

If you don't boil the bagel then it's a bialy!

yuuuummm, I love bagels that way too! But regarding the sauce--I just don't get it. I always tell my husband that if it is so hot that you no longer can taste the taste of what you put the sauce on, then what the heck is the point?????????????? Silly if you ask me. I'm just saying.

I love hot sauce. I haven't really ran into anything that affected me like that.

Bialy are made with a softer dough that is wetter. It a sticky dough compared to bagels.

I've never made the bialy but that's what apparently bakeries use (the exact same dough), I am a little surprised that it's a different dough since the customer base would not buy them.

Ah hot sauce (well peppers), that reminds me of a story from a conference. Apparently one of the speakers worked into a presentation a personal experience about capsacin and how it reacts to skin, apparently he didn't wear gloves while cutting some peppers and went to use the restroom. Needless to say he burned his "pork and beans" without thinking.
