It's like sour cream but thicker and less sour.
I use it in place of sour cream most of the time, and always with the caviar. One of the few things I like to add to the eggs.

That ~ looked ~ yummy!!  But also healthy so nah...can't hurt us with that one!
I had my first run in with creme fraiche in Denmark. Dessert was fresh peach pie and a bowl of what I thought was whipped cream. After spooning it on (liberally) I took a bite and realized it was pretty much fancy sour cream...good on a quesadilla but not so much on peach pie

Actually Crem Fraiche goes well with fresh produce and in baked goods. Since it's not as tangy as sour cream it doesn't overpower strawberries. Never tried it with a peach though, I'm not sure if they would go well together.
Just as a note only use domesic caviar when doing something like scrambled eggs topped with caviar (you mix in the CF with the eggs). Otherwise you're wasting your money on the imported stuff.
The domestic stuff is by no means bad, some people claim it's supeior to the imports, and it's far less costly.

I actually prefer Salmon roe over Beluga or other dark caviar. It's a much different flavor. American beluga is not very good compared to the "original", it's been banned from import here due to overfishing.
With beluga, I feel it suffers from the Cristal issue where the product itself is good but through pure celeb hype it gets an over inflated price that doesn't realistically convey the product. Osetra is actually the one I give out during the holidays since it tastes the best.
I've had salmon roe a few times in sushi but the one time that was just too much for me was when it was in a bowl of ramen. It was just too strong a flavor for the meal.
