Epcot at Christmas time?
This will be my fiance's and my first time at Epcot during Christmas time. What do you suggest that we do not miss during this special time? Also we will be there Thursday Dec 17th. How packed do you think the candlelight processional will be on a Thursday? Any tips will be appriciated!

Check out the Disney website. They have some dining packages they do with the Candlelight Processional that have a priority seating:

You will need to call (407) WDW-DINE (939-3463). The celebrity narrator for that night will be Abigail Breslin.
However, you don't need the dining package to attend. There is the regular "stand by" line like you have with the rides (dining package get seated first). This line fills up fast, so you may have to arrive early and get in line and wait.
As for how crowded it could be, I can't offer any advice there. I've been twice - Dec 24 one year, and Dec 25 the other - and both times packed full. But not a surprise given the dates. I have no idea of the crowds for the week before. Anyone else around can help here?

I've been in November when they have been in Christmas mode, but never in December, so you wouldn't really be able to compare how packed it was. In my case, it wasn't overcrowded and it wasn't empty. It was just right.
The only thing I wanted to do, but was to cheap to shell out the bucks for, was the after hours Christmas Party in the Magic Kingdom. To me it seemed interesting and fun, but I couldn't justify paying almost the same amount to get into the party that it would cost to be in the park for the whole day.
The Jingle Jungle Parade was nice in Animal Kingdom. The decorations in all the parks were fantastic and the Castle was amazing all lit up. You can't go wrong if you just do everything (if possible).
