We almost had Epcot 2.0 back around 2000. Remember the pavilion that was around with a bunch of countries in it...

As for another country. It would have to have something to distinguish it and a restaurant. What would a world showcase country be without a restaurant?

I don't have anything new to add to this, but yeah, I too would like to see Russia, Egypt, Greece, India and/or Australia, though Russia and Greece would probably be my top two choices.

Israel and Jordan, next to each other. I just think this would make an interesting mix.

The World Showcase has a huge European influence (almost 50%), and it would be great if the 'new' country could be Australaisan. Most areas on the globe have been covered in the parks or in resort hotels. How about Greece? Fantastic landmarks and fantastic food!

Russia for its architecture. Australia for its animals. Most of all I'd like to see India for its religions, animals, and architecture, and it has a distinct type of food which is good for creating a different restaurant.

There is plenty of space still at EPCOT. It would be awesome if they turned the old Millenium Village into a Brazil Pavillion. That place is huge, you could have Carnival every night.

Africa already has a whole land to itself in AK. No reason to put it in Epcot too.

Yes, Africa is represented in AK, the only regions of the world that are underrepresented are South America and Oceania. They could build Brazil with an Amazon River rapids ride (I know, too similar to KRR at AK), or Australia with an Matterhorn-like Ayers Rock ride (instead of the original plan of Switzerland with a replica of the Matterhorn), or since WDI likes the whole "story" and they want to incorporate marketing strategies they could build Peru and have an Indiana Jones and the Crystal Skull ride (yes, I know it isn't a Disney property, they would just have to buy Paramount first).

Millenium Village.
/me ducks
Actually, most of what they had in there would be a good start. My personal choices:

Israel/Palestine (as one nation/area, make a statement, why don'cha?)

Russia (popular vote, and already a possibility, but I'd still be really curious how WS would cover its political problems)

Spain (first European nation to come to mind not already here, Russia is in Asia, darnit)

Brazil (their MV exhibit KICKED BUTT)

Egypt (give Epcot it's own mummy ride <_< )

Greece (want to go there myself someday)

Australia (WT&, mate)

Antarctica (someone said this as a joke, I say why not! There are settlements down there!)

The Philippines (I know someone from there, this would be kewl)

Iceland (Admit it - you wish you thought of this one)

And that's ten. Though, I'll admit, I've felt that World Showcase would better accommodate its current "peace on earth" theme if it was less divided into countries and more of a seamless community. Just a thought, though.
