Hard question. My favourites are:

Magic Kingdom
- Thunder Mountain
- People mover. The reason I like it is because of the behind the scenes peak at Space Mountain that I was too scared to ride for years. Although I think you see less now than you used to. When I have 48 free minutes I look forward to watching the video.
- Peter Pan

Epcot
- Soarin'
- Spaceship Earth
While it doesn't make my absolute favourite list, I was pleasantly surprised to see the Universe of Energy on some lists, it seems to get mostly negative reviews which is shame, *sings* Bill Nye the science guy :)

Hollywood Studios
- Toy Story Mania
- Fantasmic!

Animal Kingdom
- Expedition Everest
- Festival of the Lion King
