Not sure about current procedures, but in the 90's, the hurricane response cast members for Land/Imagination/Seas would overnight at the Living Seas since it is so heavily built.
I have slept overnight at The Living Seas. When I was working there, I slipped, fell, ripped my leg open (1/2 dozen stitches), and did not want to do the 90 minute drive back to the coast. The benches in the education room were not very comfortable.
I seem to recall a program in the 90's (but have not been able to find anything documented on it) through the Youth Education Programs that did have a sleepover at The Living Seas. I may be wrong and mixing it up with other aquariums that have similar programs though.

I'd want the Cinderella suite, but be able to wander the Magic Kingdom in the middle of the night. I've always been curious about how much work it takes while the park is closed to keep it open. If that makes sense.
I also think it would be cool if the Hollywood Tower Hotel really accepted guests. (Just stay off the elevators when it is storming.)

I would sleep on the steps, by the lake, in front of Italy in EPCOT

A few places would be cool...
I'd love to sleep in the Spanish Fortress part of the line to PotC or the caves you wait in for Splash Mountain.
Also, the big room in the Star Tours queue where C3PO is talking would be fun too
