There's been no word exactly when. There is a very good chance that menus will be available online before it opens.

Today is the last day of operations for Fuego by Sosa Cigars. It is closing as part of the Disney Springs Project

It's still too early for that. I haven't heard any rumors on the shops as well.

Wetzel's Pretzels and Haagan-Dazs is having its last day of operation on the 19th. Starbucks will be taking over the location and a kiosk of Wetzel's Pretzels will open near Disney Quest around the end of the year.
Also Downtown Disney is starting their valet service next week through the holiday season. The service will be available daily from 4pm to 2am at a cost of $15. You will be able to notify valet that you will be picking up your car via text message, phone, or in person at the stand. Tables in Wonderland members will receive complimentary use of the service with a restaurant dining receipt.

Is it just me that doesn't find the boat service very helpful at DTD? It just doesn't seem to connect things that we want to go to

I would imagine it is like the friendships in the world showcase lagoon, short of you being a quadruple amputee with no form of wheelchair or assistance, odds are you will get to your destination faster if you just used the sidewalk.

We used the boat from the Swan...once. After that we walked. Seemed silly to wait for the boat, wait for it to load, and then slowly putter along. Wasted half an hour.
