well the difference is kinda obvious but i'll let you know anyways.
Expedition Everest is a Roller Coaster
Mission Space is a simulator centerfuge
Soarin is a mix of movie and ride with enhanced expierience of the senses
Lights Motors Action is a live show
Philharmagic is a 3D movie that integrates the senses.

Soarin is an amazing experience, but overall the experience of Everest from queue to exit is my favorite in your list. Croaker did a good job of describing the differences.

Yeah, you know, I really enjoy Soarin and was all set to vote for it. But I took into account everything about the ride. And with the que and the build up and the ride... EE just came out on top of the mountain. For lack of a better term.
Mission Space was ok but to me after all the hype I was a little let down. I just didn't think it was that great.
Philharmagic is an amazing 3D movie that brings back a lot of your favorite characters and music. Just try not to sing along. Very touching attaction.
And lastly, the Lights Motor Action show is pretty cool, but the one thing that really bothered me was the stage seems kinda small. I mean the cars constantly leave the view of the audience just to get up to speed.

While I love EE, you can't beat the combo of MS and Soarin'. The thematic and technical achievements are amazing and helped to revitalize EPCOT. I've seen the Stunt show a few times and I can honestly say that, although impressive the first time, it was too predictable every other time while sitting on a bleacher in the heat and humidity of Florida.

I, too, went with EE. I felt that it was drastically needed at AK, and it is now an excellent addition to the park.
I really disliked LMA (I saw it twice), and will hopefully not have to do it again.
Soarin' and MS are awesome. But, I just don't think they had quite the impact on the park on the whole like EE did for AK.
