Tiki - I just looked at our best bar here in Jax and they serve 3 different types of Mead. I was surprised and may have to try one some time.

After doing a lot of research on mead today, I've come to the conclusion that I want to try my hand at making my own batch! That pic of the Viking Blod that I posted is apparently really good. It's like ~15-19% alcohol but apparently really fruity. It peaks my interest.

Well, knowing someone who made it once, you will need to use something other than bread yeast. If you use that then you might as well make prison wine. The coworker who made mead used champagne yeast (you get it at any homebrew shop) but he said it's a bit difficult since you need enough water to not kill the yeast (since honey is anti-bacterial and can be used to preserve living tissue) but not too much as you will end up with vinegar

Just went to a local homebrew shop today and picked up some wine yeast. Put some honey, candied ginger (cut into halves) and a handful of raisins into a gallon milk jug, filled it up with water roughly 3 inches below the mouth and shook it vigorously (with the cap on...). After it sat for a couple minutes I went ahead and added the wine yeast, stirred it gently for a couple seconds then slapped my ghetto airlock on the top of the jug. Ghetto Airlock = plastic tubing taped to the jug, leading into a container filled with water. I added a wine yeast meant for more aged red wines, so I'm guessing it'll have a drier taste? It smells amazing though. I also went fruit-crazy and added a few slices of fresh apple and agitated the jug a bit. Nothing drastic. I'll check it tonight after work around midnight and hopefully some fermentation will be taking place!
