Since the original poster said we could only choose "one" thing not to miss, I would say: FANTASMIC!
Fantasmic is (in my opinion) the quintessential "Disney" experience at the parks these days. You totally get immersed in a truly magical moment that includes so many characters, music, and memories throughout the years.

This is my son's favorite ride and I agree do both night and day rides! There is never much of a line and sometimes they let you stay on twice if no one is waiting! My boy would ride it all day long! His favorite part is paging Mr. Morrow. Mr. Tom Morrow. Absolutely, as for the one thing that is a "must see"...It is all so great, I can't narrow it down. However, the one thing that very few people do (and I am just as guilty as everyone else) is to stop, look around and truely appreciate what WDW means. WDW is the benchmark for what one man (or mouse) can achieve. If Walt Disney can accomplish all of this, imagine what humanity as a group could accomplish.
