I agree with you. I'm sure one of the reasons it's built the way it is, is because it's a shop/cart/booth. I doubt there is much in the way of health/life safety regs. But it has to be more sturdy than say the gingerbread/candy village they build at Boma.
I also agree with you the one that you see on TV with Sam Brown, is much more impressive than the one that you see in person (I wonder how they do that? A full scale mock-up of the GF lobby in a secret Disney stage most likely.)
So all in all I have to say I was disappointed in the GF display. And I/we are not among those that she talks about that make a special trip to Disney to see it every year. There are things we go there for like Geek Err ummm Star Wars Weekend.

Wifey and I specifically went to the GF to check out the Gingerbread house when we where just down there. Its a sight to see.

Is it really made from edible gingerbread?
Yum.
If it is I'm surprised it lasts a month.
Firstly: Doesn't it spoil?
Secondly: If you pipe the smell around the place guests might take bites out of it.

Gingerbread (infact most breads) which are kept in a dry place will dry out and become stale but won't rot. Part of the reason humans invented bread, it's a preservation technique (like salting.)
While it's edible when it's put up I wouldn't try to eat it once it's put up.
As some of us have pointed out it's a wooden structure covered with gingerbread, and royal icing (which is sugar, egg whites, and water) which becomes pretty hard (the other common icing, which isn't good for construction is butter cream.)

Just returned from a trip to WDW and I must say this house was incredible. Wood/gingerbread, it doesn't matter - it's about the magic they create with these things. Someone asked the woman in the gingerbread store if they used the same house next year. She replied "no, when Christmas is over we take it down and send it to never land for the lost boys to eat".

Does anyone know what they do with all the gingerbread when the season is over? I was helping out at a homelss shelter in December when I began to tihnk of all the food wasted holiday time on stuff like this. I saw the house, took pics of it last year when I went, but I guess now that I see how much people struggle, I feel the food could eb put to use else where. Don't get me wrong. It is a very beautiful site, but they can easily make one out of another material and put it up every year, and contibute the money used for the food, or even donate food to shelters. Just my 2cents, and I hope it didn't offend anyone.

I would assume (but am not sure) that they put the gingerbread on the house with actual glue, as opposed to icing. So it's probably not edible after it's been used on the house.
