"Don't Miss" at Disneyland

I definitely agree with many of the rides/attractions listed above and my list would be:
At DL:
Fantasmic!
Pirates
Haunted Mansion
My 5 year old would add:
Winnie
Buzz Lightyear
Small World
Pinocchio
At DCA:
Light Parade
Aladdin
Soarin' (My dad and husband would add this)
My 5 year old would add:
Disney Playhouse
Muppet 3d
Monsters Inc
Heimlich's Train in Bug's Land
She might add the Golden Zephyr she went on it for the first time this week.
At DL:

My one attraction not to miss is neither a ride, nor a place to eat. It's not even a show. The attraction I would never miss Esmeralda herself. She is the fortune teller located front and center at the Penny Arcade on Main Street USA. So don't forget to bring a quarter and have your fortune told!

I was obsessed with getting a card from Esmerelda. Every time that I went to DL on an overnight trip there when I was in high school I had to get a card from her. It was amazingly important to me. Although I would make it a point to try and ride space mountain more that I ever had before, Esmerelda was a must do. I still have most of the cards.

On the fortune telling subject, I've also heard Shrunken Ned. How does a decapitated English explorer become a fortune teller? Is it just because his head was shrunk? Where can I find this soothsayer and are there any more of his kind?

I have a few so listen up.
Fantasmic. It is a must, save a spot early for the best veiw or you can lay down some cash and reserve as spot on the balconey of the Disney Gallery, but you have to do that something like 60 days ahead. On the plus side they give you food. Try reserve for the first showing, they let you stay longer so you can watch the fireworks from there untill they kick you out for the next show.
If you make the 50th the fireworks are my favorite. the best place to veiw them in my opinion is at the end of mainstreet between Coke Corner and the Camera shop. that way it surrounds you more
They Disney Gallery is great, ask for the tour to see what it would have been like if it had been Walts apartment. Take time like Gizmata said to watch from the balcony. It was one of Walt's favorite views of the park, he would work out there when it was being built.
Take the Grand Circle Tour on the rail road. My favorite as a child was watching the dinasaurs. Also it gives your feet a nice break.
Most of all Explore, Explore, Explore! There is so much detail every where and bits of history to uncover.

I think it's because most people tend to think/move in a clockwise motion. I know I go that same route when I approach the parks (I've only been to WDW, but it'd be the same in DLR)
