Two good guesses, but incorrect. You are in the ballpark, but think more antediluvian.
They that can give up essential liberty to obtain a temporary safety deserve neither liberty nor safety.

I have some other guesses:
(1) Ellen's Energy Adventure?
(2) Indiana Jones Stunt Show?

Dang! Ellen was my next guess!

Horizons?
It's Tough to be a Bug?
Kilamanjaro Safari?

mind, number 2 is warmer, but number 1 is in the ice age.

MmeLeota, 2 & 3 are there with Ellen, number 1 is warmish.

Okay, the clues so far:

Fantasmic & Midway Mania are in the ballpark, but you need to think more antediluvian

Horizons is warmish, but not in the same way as Indiana Jones Stunt Show.
They that can give up essential liberty to obtain a temporary safety deserve neither liberty nor safety.

Okay, cause I think we are going around in circles, I'll explain my clues.

It is in Disney Hollywood Studios (or at least the location that is now known as DHS).

Per the OED: "Belonging or proper to long past ages." This isn't the most appropriate definition, but it does get to the point that it was MGM and from a past era at MGM...i.e. working studio.

Horizons is extinct. The attraction in the form that this quote was used is now extinct, though the attraction is not necessarily extinct. Epic is in DHS.

Hope this helps.

I was trying to think of something old and outdated but not necessarily extinct...

So here's a stab...Monster Sound Show? Millionaire?

I'm trying to think of extinct attractions that are in areas not extinct.

Not Monster nor Millionaire. It isn't the Animation Tour either, but that is very close.

The tour where you do the movie scenes (like Honey I Shrunk the Kids)? I don't remember the name of the attraction...it's been a really long time!
