Thanks! I want to try a new recipe that calls for a can of pineapple so I might have to use the juice for trying this bread at the same time :D

I haven't really made a lot of rising dough breads, but this one is pretty easy to do.

Of course you could save that pineapple juice and make a Lapu Lapu instead ;)

2 tablespoons of yeast? That seems like it might overproof quite a bit since that is enough to raise about 12 cups of flour.

I just double checked the recipe and it says 2 tablespoons. Maybe the yeast is part of the flavor.

Nah, not in a sweet bread like that, they probably just overproof their bread (which is a bad thing). You can probably get away with a single packet of the yeast and get the same results.

Another way to use your pineapple juice.......

Hoopla - Adventurers Club, Downtown Disney

Serves 1
3/4 oz. coconut rum (like Malibu)
1/2 oz vodka
3/4 ox melon liquor (like Midori)
6 oz pineapple juice

Mix all ingredients in a cocktail shaker. Serve in a cocktail glass over ice and remember the Adventurers Club.

I thought this would be a hit here since there are so many fans of the sadly now-gone Club

I'm allergic to coconut and the only thing I actually like in that drink recipe is the pineapple juice so I think I will stick with using the pineapple juice in the bread recipe :lol:

I wonder if the allergen is present in the rum since (going by how other flavored spirits are made) they allow the coconut to infuse in the raw alcohol, distill it again, add the water, and bottle.

Pretty much, the only difference I think is that since the flavors are so much stronger for gin, they add it to raw alcohol and distill right there rather than let it soak.

Interesting thought, but I'm not a fan of the flavor either ~ preservation instinct I would guess. There are plenty of other fancy drinks that I can content myself with, especially since I only probably drink one or two drinks a year :lol:
