I mentioned in another thread about wanting to make the jalapeno margarita at home...but felt like I could post the before and after here since Mayhem was involved!

Ingredients: juice from 1-2 limes, half of a jalapeno with seeds removed, 3 slices of cucumber, 2 parts silver tequila, 1 part triple sec, 1 part agave nectar, salt to rim the glass

I put the cucumber and jalapeno in a glass and muddled it using the handle of an ice cream scoop...because we don't have a muddler (yet). After that we added each of the liquids...along with some crushed ice...and shook it up. Then we salted the rim of a glass and poured the concoction.

It was delicious and brought us right back to Epcot in our minds and hearts.

Now we just need to focus on getting back there in person.

Yes, you must do that. The funniest part was that Chef Scott's menu items seemed to be more popular than the French menu items, much to the consternation of the French staff.... :lol:
This is a point I forgot to mention to everyone: the menu at Remy had two sides to it. On one side were recipes from Chef Scott, and on the other side were offerings from the French chef (can't remember his name). It didn't actually say that anywhere on the menu, but we found out secretly (I think it was Soarin' who told us...?) that this was the case. The waitstaff (being from France, of course) always seemed to promote the French choices more than the "American" choices, and would be disappointed when we chose from the American side. There seemed to be a little friendly rivalry there... :wink:
Rivalry indeed. :) Which is very ironic considering that Chef Scott was looking at ways to have more French-inspired cuisine at V&A's right around when I transferred out.

Thanks for sharing the recipe and a picture BIG! That is very cool :cool: I wonder though...do you eat the stuff you smush up, or just drink the drink?

That's almost the same recipe I use at home. I use different brands of tequila and Triple Sec, and not quite as much jalapeno, but that's pretty much it right there. :D

Amy: I guess a person could eat the veggies if they wanted to, but for the most part they're just in there for the flavor. When the liquid is gone you just toss what's left. :wink:

Soarin': That is pretty funny, actually! :lol:

yep...the veggies are there just for flavor

M-dude: DW actually wants me to add more jalapeno next time! She loves jalapenos though...so no surprise there.

Does she actually munch on the chunks with the drink...? Sometimes I'll nibble a little bit on the small pieces, but not huge slabs like that! :shock:

well...I crush them up into tiny pieces before adding the liquids...and yes she does enjoy the veggies 8-)

So for a spicy-food-phobe from the Midwest like, oh, I don't know, ME... how much heat does this impart to the drink? Keep in mind that I prefer to not eat any food that is more than "mildly" spicy.

Please pass the meatloaf and mashed potatoes.

Well, there goes inviting you over for pretty much any party at my house. :) I can't get enough of spicy foods. Although in my world spice does not always equal heat, but nearly every recipe can be improved with a pinch of cayenne pepper.

I'm definitely going to try this drink recipe! :hatter_bounce:

Oh I like spices, like cumin, cinnamon, nutmeg, cloves, cardamom, ginger, and of course garlic, basil, oregano, parsley, cilantro, and marjoram. And thyme and rosemary. Sage, too.

I just don't like much heat. I have a recipe for honest-to-goodness Indian curry and I have to cut waaaayyyy back on the peppers. But not the turmeric, cumin, garlic, onions, and other stuff that I can't remember.

It is not that spicy at all...as 99% of the heat from jalapenos comes from the seeds...which you remove. I guess you could keep a few seeds in the drink if you wanted to add some heat...but really you are just wanting the jalapeno flavor which is similar to other peppers but not as sweet as a bell pepper.

I can't help it, I get bored with plain old chocolate chip cookies sometimes...just sometimes mind you.

Butterscotch & cinnamon cookies are my best though. They are always the first cookies snarfed up when I bring them to gatherings.
