Calling All Diabetics: Need Your Help on Disney Dining

I am planning a trip with my cousins to WDW in December 2009. One of them is a severe diabetic who has to monitor his blood sugar levels and takes insulin regularly. My question to anyone out there who is diabetic or has a diabetic family member: which restaurants do you have the best experience about being able to dine at with your dietary restrictions? Which are the worst? Which ones are willing to work with you to alter how the food is prepared in order to make it acceptable?

Last time we went, I would give five stars out of five to the Sci-Fi Diner. The chef came out and talked to my cousin about his dietary restrictions, went back to the kitchen and looked up a BBQ sauce from a diabetes website, prepared the sauce personally, and brought a copy of the recipe out with the food to my cousin.

This time, we're hitting all the parks, so I need tips/suggestions about which restaurants work well, and which to stay away from.

I am a diabetic too and have to take 2 insulin shots a day, so I am curious as to what you find out. I would call Disney Dining and speak to someone there in Guest Relations and ask how they handle diabetic needs.

She is in charge of Special Diets. She is awesome and such a help when it comes to my son's multiple food allergies. She can direct you and make sure all of your dining reservations are noted.
