Thank you Mouseoholic for starting this thread! Chernabog40 has to lose some weight for health reasons and I've been wanting to get serious about it too. It's really difficult when only one of you is committing to it. We've been doing this for 5 weeks and I have lost about 7 lbs. and Chernabog40 has lost about 15 lbs. (darn you men!!!!)
Reading everyone's stories is very inspiring as well! We're still trying to find that great workout for each of us, but in the meantime, we've been walking more.
It's great to have a support system!Keep up the great work everyone!

There are so many great posts since I last visited this page. It is hard to address them all. As B-babe stated earlier it is difficult but it is a choice we make. This week is a little difficult for me. I took vacation to spend some time with my parents in a condo on an island down south in Texas. It has been raining cats n dogs! It has not stopped training since Friday and so there has not been time for me to get my daily exercise. I have managed to swim a little in the rain since there is no lightning or thunder. It also has been hard to stay on my diet because I am the odd person out. So I have been doing the best I can and trying to eat healthy even though the item may not actually be on my diet.
Keep up the good work! I know drinking lots of water is also important to your body functioning properly. I add a little lime for taste.
BTW - B-babe, I did not know you had an injury. That makes last weekend’s run even more sweet! Congrats again!

Random question….Have any of you ever tied to make mashed potatoes out of cauliflower? I am told that if you boil cauliflower until it is really soft and then blend it with butter, salt, pepper and a little cream it is delicious and tastes just like mashed potatoes. I am going to try it in the next couple of days. I am just curious if what I heard is true.

Ummm, we tried the mashed cauliflower a few years back. It did not taste like mashed potatoes at all! Just like smushed up cauliflower
I like both raw and cooked cauliflower myself but prefer the cooked florets whole rather than smushed up. Let us know what you think!
One other deceptively named food is spaghetti squash!! It sounded quite awesome when my shift Captain suggested we have it for dinner at the fire department one night...that thing didn't taste at all like spaghetti!

Take it from an Irish woman nothing tastes like mashed potatoes except mashed potatoes. Why do you want to smush cauliflower anyway just have some tatties.

Good to hear from you Mouseoholic! Vacations can be difficult to stay on task, but you just do the best you can. With diets and weight loss, you have to allow yourself to be flexible at times and don't stress! I know, easier said than done. You're doing a great job, keep it up!!!

Mouseoholic... I have had smashed cauliflower that tasted awesome and very much like mashed potatoes. I think it was at Ruby Tuesdays or somewhere like that. But I have not found a recipe that I have made at home that was anywhere close to it.

We have done the mashed cauliflower thing several times. We tried many methods and found the closest to mashed potatoes (at least as far as consistency goes) we got was when we put the cauliflower in paper towels after cooking to get excess moisture out of the florets. Then blend it and add your favorite potato "flavors". We liked to use onion or garlic, a little fat free half and half, salt, pepper and some spray butter. We also sometimes would do half potatoes and half cauliflower.
We haven't done that in a really long time though...the prep is too much for our schedules.
I really like spaghetti squash too...either with salt/pepper and spray butter or even with spaghetti sauce. (We have also mixed half squash/half pasta too) I just really hate trying to cut a squash...nearly stabbed myself trying to cut one a few years ago.
The taste and texture are not what one would expect of these foods, but they sure can be yummy with some imagination!
Try this one out:
Place boneless, skinless chicken breasts in a crock pot. Add a jar of salsa. Cook on low for 8 hours.
(I usually use 1 jar per 4 chicken breasts...but I came to that conclusion after lots of testing! It depends how much sauce you like)
Tip: There tends to be quite a bit of liquid, so try shredding the chicken before serving. This soaks up most of the juice. We like to use low calorie/high fiber tortillas and make chicken tacos...though we've been known to eat this several other ways too (like nachos
)
This is the simplest recipe and is so versatile. You can use any salsa (hot, mild, sweet, butt-kickin') and serve it numerous ways. I like to make more than I know we will eat because it gets even better in the following days! I like to make chicken salad out of the leftovers.

The recipe is one I got from my aunt quite a few years ago and I believe it's a Weight Watchers recipe. When all else fails, we make that!

That is what happened with us. It sounded so intriguing we had to try it, but it didn't taste "exactly like mashed potatoes" after all. You should do what we did ~ we made them for a dinner over at friends. We had them for Thanksgiving for a couple of years....
(but I also have to mention that my parents were on the South Beach Diet at that point and these were the only "potatoes" they could legally have)

I am getting fit for one particular trip coming up. I will be running my first Disney Endurance event...Princess Half Marathin February 2011. I am so excited and cannot wait!
