I think two weeks would be perfect. I would love to get in all the park time but also to relax and take it easy for a good chunk of time would be nice too. I think with two weeks if you relaxed more and had more resort time you wouldn't feel cheated of park time.

Time there
1.5 to 2 weeks seems perfect enough time to do what you want at the parks! You can also relax and try different things all over Disney visit resorts so on and so forth! Perfect! amount of time that would allow you to also not feel rushed!

We have plenty of time to do every thing
as long as it doesnt rain the whole time

From my experience going for 10+ days as a kid during Christmas vacation, I could easily do a month now.
But I wouldn't do that stretch at just any resort. I'd have to stay in the right place: Fort Wilderness. My family always stayed at FWC on our trips, and in doing so, we had a feeling of going "home" every time we got back to our campsite. That was ideal after a long day in the park. There's a beach right there within walking distance, and a bus ride will take you just about anywhere on the property. Yep...going that route, I could easily do a month on property.
