I always use the carosel of progress to cool off and the haunted mansion is a good one ot you have that whole tour kind of thing and you get plenty of time to cool off avoid fantasy land during the hotest part of the day is my best advice most of that stuff like peter pan doesnt really get you cool ...

I always stay on disney property cause we ussually fly down and it is easier then renting a car, I love the buses and magic hours at night are my favorite times at the parks. My favorite is port oleans french quater it is nice and doesnt cost an arm and a leg.
